JAFFNA CURRY POWDER USES AND RECIPE
Jaffna Curry Powder is perfect for making rich, spicy curries with chicken, beef, goat, or vegetables. To use, fry a tablespoon of the powder with onions, garlic, and ginger before adding your main ingredients. For a classic Jaffna Chicken Curry, marinate 500g of chicken pieces with 2 tbsp Jaffna curry powder, salt, and lime juice. Sauté onions, garlic, and tomatoes in oil, then add the chicken and cook until tender. Finish with coconut milk for a rich, spicy finish. Serve hot with rice or roti.
